Makes two individual appetizers.

Special Ingredient: Hope & Tim’s Chipotle Lime Finishing Butter
2 U5-10 Shrimp, peeled, deveined
2 large Sea Scallops
2 scallions, green part only
½ avocado
Fresh diced tomato

Slice avocado and arrange on serving plates with about 1 Tbl of diced tomatoes. Prepare scallions by slicing them lengthwise, very thinly with a sharp knife. The scallion strips should curl on their own.

Lightly season seafood with S&P. Heat 1 Tbl olive oil in a stainless steel saute pan until glistening. Cook scallops and shrimp for two minutes on one side. Flip and cook other side for one minute, then add 2 Tbl finishing butter and cook for another one minute, swirling butter in pan to help loosen shellfish from bottom of pan.

Remove seafood to plate and drizzle with butter from pan. Garnish with scallion curls.
