- Chihuahua Cheese
- 1 lb Meat (Steak or Chicken or Ground/Shredded beef)
- Corn or flour tortillas
- Cilantro or Parsley
- 1 can Red Enchilada Sauce
- 3 Tbl. Fresh chopped Parsley or Cilantro
- Chili Paste (optional)
- Habanero peppers (optional)
Sauce
- ½ Onion
- ½ Large Poblano Pepper
- ½ Large Red Pepper
- 5-10 Cloves Habanero Garlic
- 2 Chipotles in Adobo Sauce
- 1 tsp.Coriander
- 1 tsp.Marjoram
Saute sauce ingredients, then puree with the Red Enchilada Sauce. Finish with fresh chopped herbs.
Season meat with
- Cumin
- Cayenne
- Salt & Pepper
Sauté seasoned meat. Spread a thin layer of enchilada sauce in baking dish. Dip the inside of tortillas in sauce then fill with meat & cheese.
Roll the enchiladas and set neatly in the baking pan. Sprinkle w/ more cheese or Mexican Cheese Mix.
Bake 350 degrees until heated throughout.
