• Chihuahua Cheese
  • 1 lb Meat (Steak or Chicken or Ground/Shredded beef)
  • Corn or flour tortillas
  • Cilantro or Parsley
  • 1 can Red Enchilada Sauce
  • 3 Tbl. Fresh chopped Parsley or Cilantro
  • Chili Paste (optional)
  • Habanero peppers (optional)

Sauce

  • ½ Onion
  • ½ Large Poblano Pepper
  • ½ Large Red Pepper
  • 5-10 Cloves Habanero Garlic
  • 2 Chipotles in Adobo Sauce
  • 1 tsp.Coriander
  • 1 tsp.Marjoram

Saute sauce ingredients, then puree with the Red Enchilada Sauce. Finish with fresh chopped herbs.

Season meat with

  • Cumin
  • Cayenne
  • Salt & Pepper

Sauté seasoned meat. Spread a thin layer of enchilada sauce in baking dish. Dip the inside of tortillas in sauce then fill with meat & cheese.

Roll the enchiladas and set neatly in the baking pan. Sprinkle w/ more cheese or Mexican Cheese Mix.

Bake 350 degrees until heated throughout.
