2 cups plain soy yogurt
1 ripe avocado
juice of 1 lemon
1 or 2 garlic cloves, crushed in a garlic press
2 cucumbers, peeled, seeded, coarsely chopped
½ Tbl sea salt
2 Tbl fresh dill, chopped
S&P to taste

Put chopped cucumbers into a colander and sprinkle with sea salt. Let stand for 30 minutes to draw out liquid, Pat dry.

Combine all ingredients in a food processor and blend until desired consistency. Serve atop gyros or as a vegetable dip.
