I first made this salad with a delicious Japanese Cucumber from my garden (see below). Try using a seedless variety like Japanese or English for the best result. If you can only get a seeded cucumber, slice it in half lengthwise and scoop out the seeds before chopping.

1/2 c. Reduced Fat Sour Cream
Zest of 1/2 Lemon
1 Tbl fresh Dill, chopped
1 Tbl fresh Chives, snipped
1/2 small Red Onion, chopped
1/4 - 1/2 tsp Salt (to taste)
1 Cucumber, cut into coarse, bite-sized chunks
1/4 cup Reduced Fat Feta Cheese (optional)

Combine first 6 ingredients in a large bowl. Fold in cucumbers and crumbled feta cheese until coated. Chill until you are ready to serve, up to 4 hours.
