The secret to a terrific salsa is good ingredients. A combination of homegrown heirloom tomatoes and backyard peppers makes the tastiest salsa. I like to dice all of the veggies uniformly, but individual preference might be for a coarser, chunkier consistency. Chop tomatoes, onions and peppers however you like them best.

5 Tomatoes, cored, seeded and diced
1 small Red Onion, diced
2 Scallions, chopped
2-3 cloves Habanero Garlic, crushed (optional)
2 Jalapeno Peppers, seeded and diced
2 Serrano Peppers, seeded and diced
1 Habanero Pepper, seeded and chopped fine
1 Anaheim Pepper, seeded and diced
1 Tbl Chives
2 Tbl Cilantro or Parsley
Juice of 1 whole Lime
2 tsp Sea Salt (fine)

Combine all ingredients in a large bowl and stir gently. Allow salsa flavors to marry in the refrigerator for one hour.
